Grilling is one of the essential way of cooking simple Japanese food. It doesn’t require oil to cook, and excess fat will be dropped while cooking. In Japan any household has a fish grill attached to the oven top.

One of the frustrations Japanese have in the United States is to figure out the way to grill food. I once bought a basket type grill to use on a stove top, but it didn’t work at all.

One of my Japanese friends told me about a roaster style grill and I bought one. As she told me the filter on the lid supposed to sucked smokes and smell, but only worked the first 3 months. But it was rather a small downside. I found it’s great for grilling vegetables, steak, and chicken as well.

It has a rack inside to place food, and heating elements are on top and bottom. So that food will be heated quickly. Before using, water will be poured at the bottom of the cooking device. Excess fat will be dropped down from the food to the water.

It is perfect to cook chicken breast quickly and juicy without drying out. Even marinated chicken, pork, and beef can be cooked well. see teriyaki salmon, cured salmon and grilled shishito peppers recipes using this grill.

It is sold as “roaster” or “indoor roaster” in the United States. Fish grill may be difficult to find, if you don’t have a large Japanese grocery store nearby. Here are some links if you would like to order online;
