This recipe is based on homemade MSG free noodle soup base.

Ponzu is mixture of soy sauce, dashi, sugar and acid. During the summer months, vinegar and citrus flavor is refreshing and help to increase appetite. You can buy ponzu at stores, but you can also make it very easily.

The first step of making ponzu is to make homemade MSG free noodle soup base, which is also very easy to make in 10 to 15 minutes at most. Once you make the noodle soup base, you can store it in your refrigerator and use it for many different recipes.

How to Make Ponzu

  • 3 tbsp noodle soup base
  • 3 tbsp of your favorite acid (either vinegar, lemon juice, lime juice, or other citrus juice)

How to Make Sesame Ponzu

  • 3 tbsp white sesame seeds toasted and ground
  • 3 tbsp noodle soup base
  • 3 tbsp of your favorite acid (either vinegar, lemon juice, lime juice, or other citrus juice)

Just mix the ingredients and that’s it. These sauce are great to use as salad dressing, shabushabu dipping sauce, and to pour over meat or chicken.
