Usage of a wooden otoshibuta

For centuries, the Japanese have been using wooden otoshibuta for stewing vegetables and fish. Otoshibuta is a drop lid, which is placed right on top of food while cooking, so that the soft starchy vegetable won’t move around during the process. It also helps to circulate small amount of cooking liquid in the pot efficiently and prevent ingredients to fall apart.

This otoshibuta is the most traditional type. It’s made of cedar, and 9″ diameter. Its weight gently pushes down the food in the pot while in use. Also in Japan, this type of otoshibuta is often used for pickling vegetables. The rigid flat surface ensures the even distribution of weights which will be placed on top the otoshibuta.

A wooden otoshibuta needs to be wet before each use to prevent color and odor stain. Generally, the care of a wooden otoshibuta is the same as a wooden spatula. Keep clean and avoid direct sun light.
