In Japan, Jack Mackerels are the most common fish for breaded deep fries. But in the United States, we can use salmon fillets for breaded fries. You can use any kind of salmon, as long as they are fresh. Other than salmon, tilapia can be used as well.
When you make this Japanese style breaded salmon, you need panko, Japanese style bread crumbs, which you can find at many American grocery stores. Also, the dark sauce over the salmon in the photo is called tonkatsu sosu, which is Worcestershire-like sauce to pour over breaded fries in Japan. If you can’t find it, you can substitute it with soy sauce, thousand island dressing, or mixture of mayo and ketchup.
