Canned Sardine with Daikon Salad

We all want to eat more fish, but getting fresh fish is sometimes not easy in the United States. How about to arrange canned sardines in Japanese style?

Canned sardines are affordable, readily available, nutritious (rich in protein, calcium and omega-3 fatty acids), and low environmental impact food. They are ready to eat, so that you don’t have to chop the heads or debone either.

In this easy dish, soft sardines are accented with the crunchy daikon. And soy sauce based lemon and umeboshi dressing gives refreshing flavor. Great for summer time, when you don’t want to cook or don’t have appetite.

Canned sardines with daikon salad is a perfect side dish, but it is also delicious in donburi style (over a bed of cooked rice).
