Chicken kara-age is sweet soy sauce flavored Japanese style fried chicken. Usually made of thighs, but breast meat could be used as well. It’s a favorite lunch item, as it is finger food, and taste good even after getting cold.
The trick to make delicious chicken kara-age is to fry the chicken pieces twice to reduce frying time and prevent the chicken to be burned. Another trick is to make the oil temperature just right. I used a fryer, because it can regulate the oil temperature exactly right.
