Probably the most frequently eaten food during hot and humid summer months in Japan is somen noodles. You can eat cold noodles with diluted noodle soup base, but when you add some vegetables and rice vinegar in the soup base, it tastes more like salad.
Traditional choice of vegetables are summer vegetables such as cucumbers and tomatoes, but you can use many kinds of vegetables on noodles. I make the dish colorful so that it is more appealing to my son.
Thinly sliced pork may be difficult to obtain. You can substitute it with boiled and shredded chicken breast, or thinly sliced ham. Boiled eggs will be good topping, too.
