Oshizushi, or hakozushi, is a type of sushi made into boxed shape using a mold. Unlike nigiri-zushi, which requires years of professional practice to make properly, oshizushi can be made easily at home if you have molds. You can buy a special sushi mold to make it easy.
I sometimes make oshi-zushi using lox. But yesterday, I got an idea to make oshi-zushi using leftover corned beef from St. Patrick’s day. Fatty brined beef goes very well with sushi rice. If you can avoid adding spices to boil corned beef, it tastes even better on rice.
I used sliced carrots to garnish, but finely julienned raw daikon will add a fresh kick.
