Hiyayakko is just a piece of individually served chilled tofu topped with condiments, such as chopped scallions, chopped shiso leaves, grated ginger, katsuo ume, etc. Usually a small amount of soy sauce is dropped on top of it just before eating.
It’s easy and economical, and extremely popular menu during hot summer month, or even in winter. It can be a side dish or a great otsumami to go with sake.
Tofu comes in soft, medium, or hard. For this purpose, choose soft tofu, as the texture is smooth and silky.
