Inarizushi is a type of homemade sushi. Seasoned rice is stuffed in a sack of stewed fried tofu, which is called aburaage. It is vegetarian and easy to prepare, and kids love it’s sweet and comforting flavor.
Aburaage is a fried tofu product, which has a pocket inside. Other than the use for inarizushi, it is often cut into thin strips and add to miso soup. Because of its meaty texture, protein and fat, Japanese vegetarians often use it. Aburaage can be bought at Japanese grocery stores, but I rarely see them at other Asian grocery stores. However, I sometimes see already seasoned aburaage in a can or vacuum pack at Korean or Chinese grocery stores.
Sweet stewed aburaage can be added on udon noodles and soba noodles, to make kitsune udon or kitsune soba.
