When you get tired of leftover turkey sandwiches, try turkey noodle soup. Surprisingly, turkey goes well with soy sauce. You can arrange this recipe in any way you like, but the point is to add ginger.
Use any vegetables in your fridge, but except starchy vegetables, such as potatoes. Other vegetables, such as carrots, celery stalks, kale, mustard greens, turnips, bok choy napa… they are all good.
If you use spaghetti for noodles, you don’t even have to cook them separately. Just put them right in the soup. If you have udon noodles, it’s even better.
