Pork kakuni is one of my favorite morsel. It feels like that tenderly stewed pork belly almost melts in your mouth. Pork kakuni is to be savored in a small quantity, due to high calorie and fat contents. It goes very well with sake and beer.
The point of this recipe is to boil pork belly for hours prior to add soy sauce flavoring. Once you add soy sauce, the meat will not get tender any more. Boiling also removes lots of fat and impurities.
