Garlic is not used in traditional Japanese food. As a matter of fact, it is one of the food items that should be avoided in zen culture. However, the modern Japanese use garlic in food and eat garlic scapes.
When I saw curled garlic scapes in the United States, I didn’t recognize that they are the same vegetable I used to eat in Japan, because Japanese garlic scapes are straight.
Sauteed garlic scapes is not that much of a recipe, because just sautee in a pan with oil and season with salt. However, the naturally sweet flavor and crunchiness of garlic scapes is so wonderful that this kind of simple cooking method really brings out the wonderful characteristics of the vegetable. They also go well with ginger pork. You can either cook together with pork or cook separately.
