When I was a child, my father loved to eat grilled shiitake mushrooms with a drop of soy sauce. I didn’t like shiitake mushrooms at all at that time, but as I get older I acquired the taste. Now I think shiitake mushrooms are very flavorful and I love that meaty texture.
Grilling is easy in Japan, as every single household has a fish grill instead of oven in the kitchen. But in the United States the easiest way to cook shiitake mushrooms is to saute in a pan. I usually use chopped scallions and a drop of soy sauce to emphasize the rich flavor of the shiitake mushrooms. This is amazingly satisfying dish for a little preparation. Perfect for appetizer or main dish for vegetarians.
