When you buy turnips, greens often come with the roots. Some may trash the greens, but turnip greens are edible. Particularly greens of white turnips are tender and delicious when sauteed or used in miso soup. Sauteed turnip greens with katsuobushi go well with rice. It is also a great side dish of meat or fish.
When you get turnips, cut the roots off from the greens as soon as possible and store them separately. If you leave them keep attached, water contents and nutrients of the roots are sucked by the greens, and end up with dry tasteless turnips.
