Shojin-age is a vegan tempura, which is a battered and deep fried vegetables. Here, I used sweet potatoes and shishito peppers. Typical shojin-age ingredients can be sliced lotus roots, sliced or whole eggplants, sweet potatoes, okras, kabocha squash, julienned carrots, thinly sliced carrots, shishito peppers, shiitake mushrooms, shiso leaves, and nori.

Other than traditional Japanese vegetables, American vegetables also can be used. One of my Japanese friend often fry parsley, which tend to be leftover in a refrigerator. Any winter squash can be used for shogun-age. as well

Shojin-age is typically dipped in a sauce of soup base and grated daikon.
