I planted daikon seeds in early spring. Now they are growing vigorously and needed to be thinned out to promote the healthy root growth.
Just like lettuces or other greens, daikon greens are deliciously tender. They are great in miso soup. If you use for salad, chop them thinly and mix with other vegetables.
I mixed fried daikon greens with cooked white rice. Alternatively, you can use radish greens or turnip greens, or mustard greens in the same way.
