Satueed Shimeji and Fresh Spinach Salad Recipe


This is a very easy and quick salad, which I originally made by chance using leftover items in my fridge. You only need 4 ingredients; shimeji mushrooms, baby spinach, vegetable oil, and soy sauce. As it turned out to be very satisfying, I developed a recipe. If you want more volume, add soba noodles.

Ingredients (for 2 servings)

  • 1 package shimeji mushrooms
  • 2 cups baby spinach
  • 2 tbsp vegetable oil
  • 1 tbsp soy sauce


Open the package of shimeji, cut off the connected root, and dust off. In a medium pan over high heat, add oil, and mushrooms. Coat mushrooms with oil in the pan and saute quickly for about 2~3 minutes. Mushrooms don't have to be browned.
Add soy sauce and turn off the heat immediately. Add the hot sauteed mushrooms and cooking liquid to spinach leaves in a bowl. Mix it well and serve immediately.
